	Each $17.99 Dozen $215.88	The state of the art Kirrihill operation places an emphasis on environmentally sound practices, including the recycling of waste water and grape marc into organic mulch for the vineyards. Cutting edge trellising technology provides the perfect balance of shade and sunlight. Vines are planted to a north south orientation on red clay loam over limestone soils at 370 metres above sea level. Cabernet Sauvignon grapes are cold soaked over five days, warmed in open top fermenters with daily pump overs, regular drain and returns to maximise the extraction of colour, flavour and tannins. Grapes are then pressed off skins and the wine transferred to new and second use French and American oak barrels for racking and maturation
	A vibrant deep red in the glass. The classic Clare Cabernet characters of blackcurrant, plum, cassis and crushed violets on the nose with enticing cedary notes. Palate features black ripe berries, mulberries and plum fruit with well integrated oak framed by elegant tannins. Intense fruit and substantial palate weight continues to a warm, lingering finish. "Full bodied and built around a framework of powerful tannins and a nice lick of French oak and ripe plum and cassis. Cabernet from two sites at the northern end of the Clare, selected on the basis of consistency and compatibility of fruit characters. A parcel was picked from the KS1 vineyard to the northeast of the town of Clare and from the high altitude Stanway family Kalimpa vineyard at Armagh in the northwest. "Clare Valley offers arguably Australia's most tender Cabernet wines. There is no compromise here however in terms of vibrancy and strong varietal expression.
