The state of the art Kirrihill operation places an emphasis on environmentally sound practices, including the recycling of waste water and grape marc into organic mulch for the vineyards. Cutting edge trellising technology provides the perfect balance of shade and sunlight. Vines are planted to a north south orientation on red clay loam over limestone soils at 370 metres above sea level. Cabernet Sauvignon grapes are cold soaked over five days, warmed in open top fermenters with daily pump overs, regular drain and returns to maximise the extraction of colour, flavour and tannins. Grapes are then pressed off skins and the wine transferred to new and second use French and American oak barrels for racking and maturation
