Stone Dwellers Cabernet Sauvignon 2009

A cool climate Cabernet wine with impeccable integration and exceptional balance. Sourced from the Trevor's Cabernet Block on the Fowles Plunkett Whitegate Vineyard in the Strathbogie Ranges, where harvesting generally occurs from late February through to early May. The sandy loam soils on the elevated and undulating, gently inclined site stimulate the vines into yielding the most intensely flavoured Cabernet berries with pungent aromatics and toothsome tannins. A very well balanced, full bodied Cabernet Sauvignon with a long flavourful finish.

Following harvest and the crush, Cabernet Sauvignon grapes were inoculated to a Saccharomyces cerevisiae AWRI 796 (a strain first isolated in South Africa), a relatively neutral yeast which allows the rich character of Cabernet to express itself. AWRI 796 produces above average amounts of glycerol, which contributes a sweetness and roundness to the mouthfeel. Parcels were treated to vinification in high tech sweep-arm fermenters to maximise colour and flavour intensity. Ferments were kept at a temperature controlled 25˚C to preserve primary fruit flavours. Stone Dwellers was matured in small one year old, mostly French oak barrels with a smaller percentage of American oaks.

Dense, plum red color. The vibrant, varietal bouquet offers chocolate aromas with oak and spice. The palate shows dark fruits and chocolate, supported by a solid structure that finishes long and lingering. Stone Dweller carries no residual sugar, whilst delivering a good balance of alcohol, meaty tannins and refreshing acid. To accompany an oxtail pie with red wine jus and chestnuts.

St Clair Pioneer Block 11 Sauvignon Blanc 2011

Pioneer Block 11 is located at Dillons Point in the lower Wairau Valley alongside the Opawa River. Owned by Colin MacKay, formerly a senior detective in the NZ Police, it is fondly referred to as the Cell Block. The lie of the land is rather flat and the proximity to the coast makes it a cooler site with slower ripening than the majority of inland Marlborough. It is often one of the very last blocks to be harvested. Site related characteristics include a distinct mineral intensity and a slightly rich salty finish that adds to the weight and length of the wine.

St Huberts Cabernet Sauvignon 2008

St Huberts won fame in Europe during the latter part of the ninetenth century for crafting world class wine, and indeed was one of the estates which launched the Yarra Valley's second golden age. The present day vineyard boasts old vines planted in 1966 which generally yield low crops of intense fruit with rich flavours. A mere twenty one hectares of vine are crafted into one of Victoria's most enduring Cabernets. A tribute to the quality is the assertion by local growers that these vines produce the best Cabernet Sauvignon in the Yarra Valley.

Planted on a gentle slope of well drained grey loamy soils, the fruit from these blocks provides the backbone to one of Victoria's most stately Chardonnay wines. Stanton Killeen Ruby Port 500ml

A blend of varying vintages of predominantly Shiraz and Touriga Nacional wines with a smaller component of Cabernet, treated and fermented separately to the point where an addition of fine brandies arrests the innoculation, preserving natural fruit sugars, textures and varietal complexities. The wines are then held in a combination of seasoned large and small oak barrels before assembling into a ruby style of port. An immensely satisfying Rutherglen wine, with some slight barrel aged characters showing through on the bouquet and palate.

The Muscat a Petit Grains Rouge varietal, oak matured in a system of old large barrels and smaller barrels in the traditional solero system. Some of the original vineyards planted by Jack Stanton in 1921 are still in production and produce some of the district's finest. This delightful offering is in a fresh young style from a passionate crafter of fortifieds, exhibiting the sweet luscious fruit flavours for which Rutherglen Muscat is famous. Blended from 3-5 year material, the wine is vibrant and 'muscaty' with strong raisin like flavours. Perfect with pastry type desserts or after dinner with real coffee, fruit cake, strong cheeses and walnuts.
