This classic Australian red wine captures and enhances the distinctive characters of Coonawarra, rich berry tones, superior length and layers of intense flavours. 	Each $47.99 Dozen $575.88	Ten blocks of Cabernet are grown at Penley, the best from each block will make it to the final wine to create a complex, traditional Australian Coonawarra Cabernet dry red. Late budburst, followed by warm conditions that produced ideal flowering. Delayed completion of harvest well into May, and a long cool maturation produced intense flavours, aromatics and colours. The use of 20% American and 80% French Troncais oaks add depth and complexity. It spent 24 months in this oak, a key factor to the integration and development. Flavour depth and length dominates the style from this outstanding vintage. Alcohol 14.5% Acid 6.9 g/L pH 3.38
	The aroma has a striking berry character with richness of fruit due to the ideal weather, average yields and late harvest. Strong smoky oak tones, which highlight the intense nature of the Penley style. The palate is rich with sweet berry flavours and strong oak and grape tannins, balancing out the strong flavours of the vintage. A wine of rich varietal flavours, choice of oak types, finely tuned acid and astringency. "It carries quite a bit of cedary, smoky vanillin, but the fruit is so fine and ripe and silken that it pulls it long through the mouth, forcing you to stop and admire its mane of delicious, currant- shot flavour." -Winefront Monthly

The objective of winemaker Kym Tolley has been to create a crisp, young wine with soft fruit flavours to be consumed now. This vintage has produced a stylish wine with soft fruit flavours. An elegant cool-climate style, the finely tuned acids allow crispness that many New World Chardonnays lack. Quality new French oak, barrel fermentation, partial lees stirring and no malo all contribute to the style, the fruit flavour is not shrouded, but enhanced by the handsome wood balance, a key feature in all Penley Wines

Penley Estate Phoenix Cabernet Sauvignon 2008

The history of Penley dates to 1858 with the founding of The Phoenix Winemaking and Distilling Company at Stepney, South Australia. In 1888 this was changed to Tolley Scott Tolley (T.S.T.) and remained with the family till 1960. Tolley’s great grandson Kym re-established T.S.T. as Penley Estate in 1988. The eminent Phoenix exudes a dominance of spicy cabernet fruit, a dense ripeness with hints of smoky oak and grape tannin. A wine made to enjoy at it's youth, while the ripe but elegant, distinctly Coonawarra Cabernet characters are fresh
