Good wines come from good fruit and good fruit comes from balanced soils. De Bortoli's Shiraz vines flourish under the Mediterranean-like climate, warm and dry with winter dominant rainfall. Deriving in part from ancient stream beds, the sandy loam soils are variable in colour and structure, ranging from red sandy earths to brown clay soils. Shiraz grapes are picked at optimum maturity to ensure maximum flavour and soft, balanced tannins. Fermentation is completed mostly in tank, a small percentage of the wine has been fermented in bottle to add complexity. Emeri is aged in a mixture of American oak barrels and on tank staves for a period of time ranging from three weeks to eight months. Alcohol 13.5%
