Sandalford has lead the way in premium Margaret River wines for over 150 years, fine tuning their regimens from vintage to vintage. The changes reflect modern practices, yet maintain the tradition and mystique behind the winemaking process. 	Each $16.99 Dozen $203.88	Sandalford's vineyards go from strength to strength with each passing year. Immediately after harvest the fruit is destemmed and crushed to ten and twenty- tonne static fermenters. Inoculated by selected yeasts and treated to rack and returns with pumpovers for extraction and cap management throughout the vinification. After fermentation the wine was drained, skins pressed with the pressings going back into the free run wine. The end of fermentation was completed in oak barriques. Sandalford was then inoculated to a known malolactic strain, after which another racking into oak ensues for ten months maturation in a combination of new American oak with one and two year old French and American oak barriques. Approx 14.0%
	Dark ruby red colour with some magenta hues. The classic Margaret River Shiraz with perfumed floral notes in addition to the aromatic spices of anise, clove and bergamot. This is a medium bodied Shiraz, certainly a fruit driven wine which possesses added complexity and character from barrel fermentation and maturation. Sweet blackberry fruit and spices all come together to make a fine red wine with opulence and balance. The harmony extends to the long finish. Sandalford will continue to mature gracefully and is a match with any red meat or spicy vegetarian dishes. An assemblage of Chenin Blanc, Verdelho and Semillon, mostly out of the Swan Valley, an area particularly suited to the aromatic varietals. The main influences are the warm, dry summers, the cumulative effect of successive years of drought, and the cooling maritime winds from the Indian Ocean. These dry grown, thirty five year old vines are extremely low yielding, translating into wines of power and finesse. Sandalford Estate Reserve Chardonnay 2008

In the 1970s, Swan based Sandalford developed a major vineyard in the Margaret River. Now one of the oldest, it is also one the largest, covering six hundred acres, the source of exceptional Chardonnay. The 2006 vintage will go down in recorded history as the coolest ever, Perth had the coolest summer for some fifty years. Harvest dates were at least one month later than usual, rather an atypical vintage. The positives have been that flavour ripeness tracked beautifully, with rising sugar levels and acid retention also higher, giving crisp, clean wines

The Sandalford winemaking story goes back, way back to the 1840s as the second land title in all of Western Australia. In 1972 Sandalford broke out of their Swan Valley environs and established an estate vineyard along the Margaret River, today it is one of the oldest and most salubrious. Another winner in a long lineage of successful vintages. Crafted from Verdelho grapes grown primarily to Sandalford’s Wilyabrup 35 year-old, dry-grown Margaret River vines. "Verdelho has languished in the shadow cast by chardonnay far too long. If you are ready to scream at the next cookie cutter clone unwooded chardonnay or flat SSB Classic, this could well be your salvation. Sandalford Reserve Sauvignon Semillon 2008

Sandalford spares no expense from the vineyard through to bottling, to ensure that their Estate Reserve wines are regional benchmarks in their own right. These quality standards are worth the effort, the best estate grown Semillon and Sauvignon Blanc are earmarked, and only the very best free run juices are vinified. The big news out of vintage 2007 was the large reduction in crop levels, in some cases by as much as 50%. Overall the fruit from this year’s harvest was perfectly ripe, as is the acid profile, fruit flavours and intensity were outstanding
