High quality fruit is essential to produce good wine. Traditional hand picking is used for special parcels of fruit but the majority is machine picked to allow the fruit to be harvested in the cool of the night. The winemakers select grapes from vines with generous canopy cover, a practice which encourages the fruit to ripen gently and naturally. Grapes are picked, pressed and allowed to settle naturally before being filtered. Timing and a steady hand are always critical to achieve the ideal hue of Rosé pink.
