There are four tiny patches of vine at Scotchman's Hill, which have been mollycoddled by Robin Brockett, since the start of his tenure as chief winemaker in the 1980s. Excruciatingly limited after a strict pruning and rigorous sorting of fruit, they each yield a mere hundred cases of wine. Brockett has set aside the precious harvests of these superior blocks for his own label, a personal project to hand craft the finest of vintage, an exclusive range of the Bellarine's most elite single vineyard efforts. It is the pursuit of excellence, a devotion to the art of Methode Traditionelle and the exceptional quality of fruit which are the fundamentals. Traditionally Pinot Noir dominates the cepage followed by Chardonnay and a fifth of Pinot Meunier, depending on the conditions of vintage. The Cellar Master has to achieve the total consistency of taste, which makes Brut Yellow Label so immediately recognisable, so utterly reliable in terms of quality, palate and bouquet. He will draw on priceless reserve wines, sometimes as much as 40% to ensure the continuity of style. Each of these older wines, perhaps nine years old, is kept separately to preserve the unique qualities of the vineyard and vintage.
