Xabregas Cabernet Merlot 2007

Xabregas manage the finest vineyards in the greater Mount Barker area. They are contract grows for Houghton, Howard Park and Forest Hill, the choicest parcels of Merlot and Cabernet however are retained and earmarked for their own label. It is the belief at Xabregas that the alchemy of vinification takes a back seat to the quality of fruit coming from their three estate vineyards. The growers and winemaking team work side by side to preserve the expression of terroir, achieving a wine with excellent colour, soft, beautifully integrated tannins and maximum fruit intensity.

From vines grown to lateritic, gravely and sandy loams. Crop thinning plays a significant role in the ultimate quality of fruit. Grapes are de-stemmed and crushed, the must is chilled on its way to tank. Yeast is added the next day and the juices are pumped over the cap of skins three times daily for thirty minutes to release colour, tannin and flavour. A large proportion is vinified in ganimede fermenters which utilise the energy of the carbon dioxide gas produced during fermentation to power the pumpovers. Xabregas was put to oak for completion of malolactic, racked every four months and matured in a selection of new and seasoned French, American and Hungarian oak barrels for eighteen months. Alcohol 14.5%

Deep red colour. Sweet lifted fruit aromas, mint and violet, blackcurrant, mulberry and toasty oak. A soft and silky, fruit driven palate, sweet fine grain tannins, rich full mouthfeel with fleshy complexity, quality spicy oak influences. Drinking very well on release.

The Xabregas Mount Barker vineyards enjoy a microclime that's somewhat similar to some of Europe's great winegrowing districts. Riesling is afforded a great deal of respect as a grape and generally the winemaking influence is minimal, to preserve the aromatics. Artisan Riesling is the antithesis. The aim is to interact with the precision of Riesling's acidity and flavour to add complexity and most importantly texture, without overpowering the delicate fruit.

Xabregas are all about fastidious vineyard management and exacting vinification techniques. There are no compromises in the pursuit to create the defintive Mt Barker Sauvignon Blanc. Artisan focuses on balancing the distinctive flavour profile of Sauvignon Blanc with the complexity of new oak, whilst maintaining structure over a fine boned acidity. The wine is treated to a laborious lees stirring batonage while it ages, barrel ferments contribute to the vigorous complexity and perfect integration of oak, striking the ultimate balance between vibrant fruit and artisanal styling

Xabregas Artisan Syrah 2010

An assemblage of Shiraz and Rousanne from the finest vineyards south of Mt. Barker, harvested throughout the cooler temperatures of early morning at closely timed passes amongst the vines to create a Syrah of structure and complexity. Each site contributes a uniqueness and influence adding a different personality to the final wine. An elegant, medium weighted Syrah with abundant spice and graceful tannins, co fermentation with portions of the Roussanne grape adds another layer of texture and depth to this emerging Mt Barker style.

Xabregas are true terroirists, as the focus goes beyond the concept of new world wines. Xabregas don't adhere to the stereotype of an Australian style, choosing instead to bring the unique expression of their single vineyard estate to the fore. Vines were expertly planted to follow a strong line of alluvial iron based gravels that concentrate on the hill sides of each vineyard, reminiscent of the Rhone Valley's terraced slopes.
