A harvest of fine, estate grown Cabernet Sauvignon from Dominique Portet vineyards in the Yarra Valley, a relatively cool climate zone allowing for longer ripening, is vinified alongside a component of Shiraz from the slightly warmer, drier climes at Heathcote, where vines are planted to the most salubrious, ferrous Terra rossa soils.

Named for a French architecture stone fountain which stands outside the winery, Fontaine is an entirely appropriate adjective for this effusive, effortlessly luscious wine. Fontaine Rosé is tickled pink, the colour just blushes through the glass, a visually stunning wine with chic and panache, as designed by Dominique Portet. The elevated vineyards and elaborate aspects make the region so Rhone-like in terroir that it beckoned Dominique Portet to pump continental flair and winemaking skill into parcels of the choicest grapes. A solidly structured wine, instantly recognizable as Victorian Shiraz, with supple textures and intense fruit, the engaging aromas and flavours focus on blackberry, plums and black cherry with a good dollop of aromatic spice.

Dominique Portet grew up amongst the vineyards of France and appreciates the rejuvenating qualities of blush coloured wines. The vibrance of Yarra Valley Chardonnay is dominated by a slightly larger component of savoury Pinot Noir, all grown to good local vineyards and fashioned into the cultivated French interpretation of Rosé. The tide has turned for Rosé in Australia towards the refreshing, more savoury sparkling styles which have always been heralded in France. It is ultimately an empathy for the grape and respect for the shared experiences of winemaking pioneers which drive the Portet wineworks, nestled amongst the flourishing vineyards of Victoria. It is from these propitious sites on the benign aspects around the Yarra Valley that Dominique Portet identifies auspicious parcels, so akin to the precious Merlot grapes he husbanded during his childhood amongst the vines of Château Lafite.
