Kingston Estate Cabernet Sauvignon 2010

Whilst Kingston may be the most baronial winemaking estate on the Riverland, each vintage their dedicated team acquire bespoke parcels from the most endowed vineyards to make generously flavoured wines which are the essence of South Australia. Cabernet Sauvignon is a style that Kingston do exceptionally well and there are no compromises throughout the winemaking.

Cabernet Sauvignon is harvested from choice vineyards in Coonawarra and Wrattonbully, throughout the cool of night to retain essential fruit character. Grapes are brought to the estate wineworks at Kingston-On-Murray. Individual parcels are handled separately throughout winemaking until the final stages of assemblage. After crushing and destemming, juices are vinified over a period of seven days in rotary and static fermenters, peaking at a temperature of 28ºC to 29ºC, whence the colour, flavour and tannins are extracted. Following the completion of malolactic which softens the wine and adds complexity, batches are matured in a selection of French and American oak barrels. Alcohol 14.0%

Deep crimson red with slight purple hues. Bouquet displays cherry, plumb and bramble up front with a violet fragrance. It also shows complex black olive and tobacco aromas. The palate is superbly full bodied showing dark fruits with firm tannins and a long, succulent, well rounded palate finishing to hints of spice and vanillin oak. Match with spiced kebabs and couscous.
