Sir Paz produces award winning red on red wines, crafted from red grapes planted to Terra rossa soil. Formerly a chestnut tree grove, the elevated site is perfectly suited to vines, as the grapes experience cool conditions, ripening slowly for maximum flavour development. A racey Victorian firebrand Shiraz with sophisticated oak handling, a wine of style and character, worthy of a place in any cellar.

The most valuable part of the Yarra Valley for vines is a unique belt of volcanic Terra rossa soil, which encourages vines to yield Shiraz grapes with extraordinary characters. Sir Paz Estate is situated at the very heart of this belt. Whilst the property is meticulously maintained by a highly professional and dedicated team, the most significant feature of the Sir Paz vineyard are its rich soils. Grapes are hand picked at different times, depending on the particular sections of the vineyard and crushed immediately to minimise the effects of oxidation. Treated tomaturation under a combination of tight grained French and American oaks, Sir Paz maintains a policy that an extravagent forty per cent of all barrels must be new.

A brick, redgum colour. Bouquets of bayleaf and plum, liquorice and cherry, smokey oak and tarryness. Complex and clean, alluring berry fragrances, olive and choco-mint. An engaging palate bathed in walnut-like oak, supported by swarthy tannins, there are ferrous elements, pepperyness, mulberry and allspice. Firm and mouthfilling, heady flavours, jelly and jujube, raspberry and cedar. The complexity resolves into a fully integrated finish with an afterglow of warming fruit and spice.
