Blackwell is sourced exclusively from sloped vineyards around the north and west of Barossa Valley, subregions which yield small harvests of exceptionally concentrated Shiraz grapes. The focus is on retaining freshness and purity of these extraordinarily intense, dark fruit expressions while retaining perfect tannin balance in the finished wines. The northern hamlets of Kalimna and Ebenezer contribute juicy dark fruit and rich mocha flavours, while parcels from western districts such as Seppeltsfield give Blackwell it's muscular, brooding structure.

The keys to this balance are site selection and time of picking. Shiraz is sourced exclusively from the north and western slopes of Barossa. Parcels from the distinguished districts of Seppeltsfield and Marananga, Greenock and Ebenezer are picked off particularly low yielding vineyards which grow grapes endowed with intense flavours.

St Hallett chooses individual sites each year for inclusion into the Gamekeepeer. Shiraz is sourced from a patchwork of vineyards scattered throughout the central and western districts of the Barossa which can yield parcels of intensely flavoured grapes. The Cabernet hails from cooler, slower ripening parts in the south. All during the ripening period, St Hallett's winemakers and team of viticulturalists spend time in the vineyards monitoring the sugar/ acid profiles and flavour development, co-ordinating the harvest to a schedule based on complete ripeness.

An exclusive Shiraz wine articulating the concordance between the Barossa and Eden Valleys, derived from low yielding vines up to a hundred years of age. The meticulous nurture and respect for these Old Vines demands that parcels are culled throughout the winemaking, from pruning in the vineyard until the final stage of sampling the ageing stocks, to determine the best barrels. Old sites in the warm nether parts of the Barossa establish the rich foundation, whilst higher, cooler aspects of the Eden Valley contribute lifted aromatics and seamless tannins.

St Hallett Poachers Blend 2012

Poacher's Blend embraces a spectrum of aromatics, from the fresh, tropical fruit of Sauvignon Blanc to the greener mineral of Semillon. Importantly, Semillon is picked at three different ripeness levels. The younger Semillon brings natural acidity, a moderately riper component proffers herbaceousness, the fully ripe adds mouthfeel and richer grapefruit citrus elements. Sauvignon Blanc is picked relatively early to retain the gooseberry lift, importantly the Riesling component contributes backbone and floral lime citrus characters.
