Major Sir Thomas Mitchell left more than just an invaluable bequeth of our nation's most detailed frontier maps. Mitchell distinguished himself in Wellington's army during the Napoleonic wars in the renowned 95th Baker Rifles. A gifted draftsman, he found his way to the nascent colonies of Australia, where his acumen at mapmaking won him the office of Surveyor General. During one of Mitchell's historical expeditions, he charted the fertile lands around Victoria's Goulburn Valley, establishing the colonial fruitgrowing township of Mitchell's Town. The district's auspicious orchards flourished until Colin Preece identified the region as an opportune place to grow world class wine. Vineyards thusly planted around the Goulburn billabongs, came to be known as Mitchelton. Now a half century of age, the vines remain one of.. Barriques between the billabongs»

Halls Gap Vineyard was planted 1969, along the steep eastern slopes and parched rocky crags of Grampians Ranges, at the very beginning of a renaissance in Victorian viticulture. Since early establishment in the 1860s by the noble Houses of Seppelt and Bests, the region had earned the most elite peerage, a provenance of extraordinary red wines, bursting with bramble opulence and lined with limousin tannins. The Halls Gap property had long been respected as a venerable supplier to the nation's most illustrious brands. Seppelt and Penfolds called on harvests from Halls Gap for their finest vintages. Until 1996, when it was acquired by the late, great Trevor Mast, who was very pleased to bottle Hall Gap's fruit behind the exhalted label of Mt Langi Ghiran. Jim Beam uses yeast from their private stock, carefully cultured to maintain purity and consistency. To keep quality consistent, each vat uses a mix of new yeast and yeast from a prior distillation. A second distillation refines the alcohol's proof and flavor, producing a new condensate called high wine or white dog. The high wine is then transferred directly to barrels without filtering or additives. Jim Beam is distilled at lower temperatures and reduced to no more than 125 proof or 62.5% alcohol. This retains more of the Whiskey's natural, mellow character.
