Three British Army officers, in their capacity as agents of the East India Company, established one of Western Australia's first agricultural enterprises in 1836. Named after Captain Richmond Houghton, it was not until Thomas Yule's stewardship that vines were planted and the first vintage of Houghton wine flowed in 1859. Samuel Smith migrated from Dorset England to Angaston in the colony of South Australia circa 1847, he took up work as a gardener with George Fife Angas, the virtual founder of the colony. In 1849, Smith bought thirty acres and planted vines by moonlight, the first ever vintages of Yalumba. One of his most enduring legacies were some unique clones of Shiraz, which were ultimately sown to the illustrious Mount Edelstone vineyard in 1912. Champagne Henriot was officially founded in 1808 by Appoline Henriot. She was the niece of the very famous Abbe Godinot, an erudite man who contributed greatly to improvements in viticulture and sparkling winemaking. Champagne Henriot became the favourite of the Dutch court and the Hapsburg emperors. Brut Souverain is a Champagne full of elegance, lightness and finesse, sublime as aperitif and exquisite through each course of an entire meal. A dominant component of Chardonnay gives this Cuvee a comely and racy profile.

At the end of the 19th century, the phylloxera plague reached the vineyards of Champagne. The House of Henriot was one of the first to reconstitute vineyards with grafted stock. Henriot cultivates a very particular style, the pursuit of perfection. It chooses the best wines from the best Crus demanding the most careful work in the vineyard and from the cellar workers. In addition to its own vineyards, Henriot purchases grapes from growers in the best terroirs. Pinot Noir from Verzy, Verzenay, Avenay, Mareuil and Mailly. Chardonnay from Chouilly, Oger, Avize, Mesnil, Vertus and Cramant. Each year, about a third of reserve wines are incorporated in the Cuvee, ensuring the consistency of the Henriot style.
