The very first blocks of vine planted at Scotchmans Hill, are now in their fourth decade. Set aside for bottling as a range of limited release, single vineyard wines, they represent the first growth of viticulture from the fertile crescent of Port Phillip's western shore. Crafted to traditional old world techniques, very similar to the great Crus of la Bourgogne, they afford the true enthusiast an opportunity to engage with the decadent delights of the greater Geelong, as sampled alongside Gruyere, game and the finest gourmandise... Longview are one of the most highly awarded wineries in Adelaide Hills, inducted into the South Australia Tourism Hall of Fame for their stately homesteads and the sublime excellence of their vintages. At latitude 45 degrees south, Central Otago is the southernmost wine region in the world. Snow topped mountains, rocky ranges and dry tussock hills, a place of climatic extremes, bitterly cold winters, parched soils and discouragingly poor fertility. Designed by the angels in heaven for sublime and stupendous vintages of Pinot Noir. At the very epicentre of the most desirable confluence in Central Otago microclimes is Nanny Goat Vineyard. Conspicuous for her serious weight of fruit, splendid structure and chewy, textural palate, Nanny Goat make a magnificently endowed style, offering the understated power and presence to accompany gourmet game sausages, meaty Mediterranean braises or char grilled rib... The secret of Lustau lies in its ageing and blending. This very special old Sherry consists of many different wines taken from butts containing wines of different ages. The work of blending is an art, practised by the winemakers who use all their five senses, but especially the sense of smell. In the laboratory, small quantities of wines from different butts are blended, before an amount of wine alcohol required to fortify the Amontillado is decided for each individual batch. Serve at a cooler room temperature. Alcohol 18.5%
