	From 31 rows of 110 years old vines at Woodstock, only the most exceptional barrels of aged Shiraz are selected for The Stocks. 	Each $49.99 Dozen $599.88	The vines are closely inspected throughout veraison, exposed bunches are removed to prevent sunburn and canopies reduced to ensure perfect ripening. The vineyard is dry grown and yields are deliberately kept low, resulting in intense concentration of flavour. The fruit is harvested at night to preserve the delicate berry flavours. The grapes are crushed and cold soaked for twenty four hours in small open fermenters, inoculated, vinified and hand plunged twice daily. The wines are then aged in select French and American oak barrels under a temperature controlled cellar for eighteen months. Each barrel is monitored and only the finest are selected for inclusion into The Stocks. Alcohol 15.0%
	Deep, dark, indigo hues. Aromas of dark berry fruits, blackberry, mulberry, blueberry layered with dark chocolate, coconut, vanilla and liquorice. Rich and full bodied, showing underlying charry oak character. Ripe, sweet, fruit with firm persistent tannins, a complex chocolate berry heart, a lovely structure, good middle palate richness which lingers. Stand thirty minutes before decanting. "Christmas pudding aromas on the nose with slightly herbaceous, green and stalky undertones. On the palate it is immediately mouth-filling, savoury and full of dried figs and date jam aromas with a lovely, fine-grained tannin structure. Compared to other McLaren Vale Shiraz, Woodstock is made to a more elegant, fruit driven style. Being a very vigorous red variety, the key is to manage the Shiraz leaf canopies carefully to ensure only the best fruit is derived from the vines. "Woodstock's McLaren Vale red wines offer honest regional personality and drinkability in youth. This Shiraz is a good example of the house style with plum, spice and sweet vanillin aromas that are clean and intense. The palate is medium-bodied with succulent blackberry and mint!" -The Age
