Inspired by the amazing depth and character of Heathcote Shiraz, the Bialkower and Kirby families determined the most idyllic location for the production of an ultra premium Shiraz to rival Australia's finest. The shared vision of excellence is reflected by a single minded focus towards quality across all parts of the vinification process. 	Each $34.99 Dozen $419.88	A powerful yet elegant wine packed with flavour and complexity, embodying the affinity between Heathcote and Shiraz, the dry and mild climate combines with ancient red soils to produce a wine of telling regionality. A mostly Shiraz wine with a tiny component of Grenache this year. Grapes are vinified in a combination of open and closed fermenters with up to three weeks total time on skins. The wine was then pressed and transferred immediately into a combination of new and seasoned French and American oak barrels for the completion of malolactic fermentation, where it remained for a total of eighteen months, racked four times before being filtration and bottling. Alcohol 14.5%
	Dark dense red. Powerful nose of blackberry and raspberry with nuances of cedar, chocolate and spice. Flavours are a subtle combination of dark berry fruits integrated with complex oak and mixed spices. The wine features soft supple tannins, seamless integration of oak and acid with a long rich lingering finish. "Rich blackberry and raspberry fruit with spice, licorice and toasty oak in this central Victorian red, a complex palate and fine if firm tannin on the finish.
