Tar Roses Heathcote Shiraz 2009
	Winemaker Don Lewis adores the tannins, structure and distinctive expressions of Spanish wine. The grapes for Tar & Roses are from vines grown to three elite Heathcote vineyards, two of which must be hand picked, all components are treated separately throughout their fermentation and maturation. The larger volume of Shiraz comes from richer Cambrian soils, while the smaller parcel is grown to much tougher grantic soils. The first component makes a rounder, fuller fruit driven wine, while the latter is more restrained and elegant Heathcote
	Each $15.99 Dozen $191.88	The larger machine harvested volume is crushed and destemmed into a Potter fermenter, and pumped over twice a day for approximately twenty minutes each time. The two smaller batches were crushed and destemmed into 2½ tonnes open fermenters and hand plunged three to four times daily. After ten days fermentation, during which time the temperature and acid levels are constantly monitored, components are individually transferred to tank using an air bag press. Finally, the wine is racked off gross lees and put into barrel to finish malolactic fermentation and to endure maturation for twelve months under a combination of new and prior use French oak barriques. Approx 14.5%
	Deep ruby red with pink hues. Ripe blood plums with whiffs of black licorice and of fennel, dusty vanilla oak and secondary floral hints. The palate is complexed with flavours of chocolate box goodies of every description, moving from the darkly liqueured cherry, to the liquorice and the turkish delight. The flavours linger with good length and structure. A complex assembly of Grenache and Carineña grown to the Denominació d'origen Priorato, espoused by an equally stirring addition of Syrah and Cabernet Sauvignon. Priorat is a long forgotten winegrowing area, highly salubrious in it's time, it was ravaged by phyloxera and abandoned in the nineteenth century. The rocky, steeply sloped, mineralite soils have been rediscovered by Don Lewis and Narelle King who take time out from their operations in Victoria once a year to vinify the parched and precious fruit of Merum Priorati

Tar Roses Pinot Grigio 2009

Don Lewis spent thirty five years as winemaker at Mitchelton. He travels to Spain each year to make wines for Merum Priorati, and returns to Australia just in time for vintage. Pinot Grigio is sourced from three blocks on the Mt Helen, Merron Park and Tarup Ridge vineyards in the Strathbogie Ranges. A higher altitude of 400 metres provides cooler conditions, allowing the grapes to ripen slowly, ideal for development of the classic varietal pear compounds, that can be tasted in the fruit, and are retained within the finished wine. Tar Roses Tempranillo 2008

Exclusively Heathcote appellation Tempranillo. In contrast to the Nebbiolo and Sangiovese, Tempranillo is an early ripener and has no problem reaching full maturity in the soils of Heathcote. It is prone to developing big bunches and luscious berries when the vineyard provides some restraint. "Thoroughly uplifting bouquets of anise and spice, cherries and currant, light vanillan oak, ginger, olive and savoury herbs.
