Winemaker Don Lewis adores the tannins, structure and distinctive expressions of Spanish wine. The grapes for Tar & Roses are from vines grown to three elite Heathcote vineyards, two of which must be hand picked, all components are treated separately throughout their fermentation and maturation. The larger volume of Shiraz comes from richer Cambrian soils, while the smaller parcel is grown to much tougher grantic soils. The first component makes a rounder, fuller fruit driven wine, while the latter is more restrained and elegant

The larger machine harvested volume is crushed and destemmed into a Potter fermenter, and pumped over twice a day for approximately twenty minutes each time. The two smaller batches were crushed and destemmed into 2½ tonnes open fermenters and hand plunged three to four times daily. After ten days fermentation, during which time the temperature and acid levels are constantly monitored, components are individually transferred to tank using an air bag press. Finally, the wine is racked off gross lees and put into barrel to finish malolactic fermentation and to endure maturation for twelve months under a combination of new and prior use French oak barriques. Approx 14.5%
