	Each $69.99 Dozen $839.88	Cabernet is sourced primarily from the estate's Old Cabernet Block on the historic Laira property, the balance from choice parcels on the Kirkgate vineyard. All components were fermented on skins with twice daily pump overs to ensure maximum extraction of flavour and colour. The wine was pressed off skins while still slightly sweet and pumped to new, fine grained French oak barriques and hogsheads to complete fermentation, followed by racking off lees and return to the same barrels for twenty two months maturation. During the first six months of ageing, the barrels were further racked and returned to achieve required clarity and contribute to the wine's development. Alcohol 14.9%
	Deep crimson red. A vibrant nose displaying a rich mix of dark fruits, blackberry, mulberry and cassis with some traditional minty notes. Supporting cedar, mocha and vanilla are derived from barrel fermentation and maturation. A rich and complex fruit driven palate displaying sweet, dense, dark berry fruit characters and some chocolate mint notes. The flavours seamlessly integrate with vanilla and mocha oak and flow through to a long, fine and lingering, fruit filled yet savoury, silky tannin finish. The wine of choice to accompany rib of beef and red wine jus. Cabernet plantings came much later, and have since been the source of superlative single vineyard wines.
