Etienne Sauzet Puligny Montrachet Les Referts 2008

Puligny Montrachet is a small village on Burgundy's salubrious Côtes de Beaune. Within the defined environs of Puligny's auspicious vineyards are seventeen elite climats classified as Premier Cru. Les Referts is a four hectare site in Puligny that sits lower down the slopes. Soils here are quite rich in ochre clays and limestone, imparting exquisite butter and honey characters into the wines.

Grapes are picked off vines age forty five years of age grown to a ¾ hectare allotment. The berries are hand sorted to remove grey rot but and cull any under ripe fruit before passing through a pneumatic press and cold settling at 10°C to 12°C for up to twenty four hours. The musts are vinified at 18°C to 22°C for three to six weeks in a selection of new and seasoned Troncais and Allier French oak barriques. The wines complete their malolactic and remain in barrel for eleven months through a course of battonage on gross lees before assemblage and transfer to tank for a further term of six months élévage on fine lees. The finished wine is given a light fining and filtration, followed by a final pass through a membrane filter.

Light golden hue. Delicate aromas of white flower, dried citrus and hazelnuts. A silken textured palate with apple, butterscotch and floral notes, petit fours and brioche from time spent on lees. A memorable finish with hints of marmalade and fine oak.

Etienne Sauzet was born 1903, heir to a few parcels of vine, to which were added further allotments until he accumulated twelve invaluable hectares of precious Montrachet terroir. Sauzet established his name as one of the top marques in Burgundy. The Domaine is now operated by his granddaughter and her winemaker husband, the very gifted Gerard Boudot.

Les Folatières takes it's name from local folklore, which recounts how the slopes around Puligny would come alive on warm summer nights with St Elmo's fire. The distinguished climat of Les Folatières is the largest of Puligny's Premiere Cru vineyards, it lies near the summit of a slope midway between Meursault and Montrachet, where the elevated mesoclimes impart a juicy minerality to the wine. Domaine Sauzet acquires much of his fruit from the upper reaches of the vineyard, to construct a richly endowed wine of great elegance, intensity and length.

Gerard Boudot is one of Puligny's most gifted winemakers, married to a granddaughter of the late, great Etienne Sauzet. Although techniques are more modern in the hands of M. Boudot, he faithfully maintains Etienne Sauzet's tradition of hand sorting his fruit before applying the most artisanal effort to small batches of 1er Cru Burgundy. Les Referts is a four hectare site in Puligny that sits lower down the slopes, very close to neighbouring Meursault. Soils here are rich in ochre clays and limestone, imparting exquisite butter and honey characters into the wines.
