Essential to the success of Pasqua is an inventory of the finest vineyards in the premiere winegrowing districts of Italy. Sangiovese is harvested from good sites in Puglia, husbanded by dedicated growers at complete ripeness, bunches are gently crushed to avoid harsh tannins and cold settled for optimal extractions. Ferments are vinified to dry and treated to a month of natural, spontaneous malolactic, followed by assemblage into the finished wine and bottling for a term of bottle age before release.
Ruby red colour. Ripe berry aromas, cassis, smoked meat and tar notes, cherries and blueberry fruit. A luscious blackberry palate, made savoury by black olive characters, garniture and leaf.
