Celestial Bay Cabernet Sauvignon 2010

Celestial Bay is the achievement of Michael and Kim O'Brien's long standing passion for wine, an adventure which led them to the Margaret River region in search of property most suitable for viticulture. The perfect location was identified on Metricup Road in Wilyabrup. A former dairy farm, the site provides all the necessary requirements, good soil, a moderate maritime climate and reliable rainfall. Fine fruit characters, freshness and definition, the aim is to emulate the French approach which values structure and balance over obtuse power and depth.

Extensive experience making wine in the Margaret River region and time working in France have shaped the approach at Celestial Bay. Crafted in the tradtional manner utilising small open pot fermenters and intensive maceration techniques. Each ferment is treated to a rigorous course of hand plunging and pumpover daily, where the fermenting juices are pumped from the bottom of the tank to be percolated through the skin cap, ensuring that extraction from skins is maximised. Pumping over also introduces oxygen to the process, stabilising and softening the polyphenol components. Matured in French oak barriques for twenty months, good colour and a finely integrated tannin structure is achieved. Alcohol 14.5%

Deep purple hues. Blackcurrant, spearmint fruit aromas lead before scents of cassis, black olives and earthiness with coffee/ dark chocolate oak. An elegant, stylish wine with mouthfilling palate, ripe berry flavours, firm tannins and good acid balance followed by a clean, lingering finish. Drinking beautifully upon release while offering excellent potential for development. Simply sublime with a roast leg of lamb under the traditional mint sauce.
