Chevalier Blanc de Blancs Brut N.V

This House was founded in 1920 by Eugene Chevalier, who chose a location in the midst of the finest vineyards in the heart of southern Burgundy. Chevalier de France Blanc de Blancs starts with a selection of Chardonnay, Colombard and Ugni Blanc from the Nuits-Saint-Georges. A delightfully fresh and delicate sparkling wine with a charming touch of fruitiness, it is Brut without being austere. The wine exhibits the characteristics of the fine grape varieties from which it is made, with fruity aromas, a light body, and an elegant style with good balance. The finish is clean and lasting.

4-5 times a week the cellar master at Chevalier de France uses a small propeller in the tank to gently swirl the wine. This provides contact with the lees, which contributes viscosity, promotes mouthfeel, and enhances a toasted bread character in the aroma. At Chevalier de France, this process continues from 4 to 6 months in order to ensure distinctive and expressive flavors. A liqueur de dosage is then added to adjust the level of sweetness and the wine is bottled. Alcohol 11.5% Residual sugar 1.0 pH 3.20 Acidity 41gm/100ml.

Delightful rich deep antique light gold in colour, clearly full of fruit characters with a magnificent bead and lustre. Nose is of toasted Brioche, marigolds, butter and a beautiful almondine honey fragrance. There are lifted characters of creme caramel, clover, wild fresh mint and guava. On the tongue there is an immediate sensation of fresh bakery delights, jams and marmalade, more brioche, fruit danishes and a a slight acid at the finish that recalls veined cheeses and teal leaves. Very delightfully rich with wonderful nuances.
