Duval-Leroy pursue perfection throughout the entire winemaking process. Harvest must be conducted under the best possible conditions and the pressing must be done immediately. To avoid oxidation of grapes, Duval-Leroy have five pressing centres with a total of sixteen presses. The musts are transferred immediately to the estate wineworks at Vertus. This initial vinification must proceed slowly, at a constant temperature of 16°C to 20°C. Once bottled, the wine embarks on a secondary fermentation, to be followed by a long ageing process, final disgorgement and Liqueur doseage, aided by the darkness, good humidity and constant temperature of the Duval-Leroy chalk cellars.
Straw gold colour with an effervescence of fine bubbles. Biscuit aromas, chocolate characters, soft supple perfumes of toasty citrus. Rich and well-structured, achieving the perfect balance between power and finesse, it draws out flavours of dark chocolates, cinnamon and roasted yellow figs, expressing its subtle, melt in the mouth vinosity. Match with soft cheeses such as Brie and Camembert, Comté or Reblochon.
