A traditionally crafted, small batch wine, assembled from parcels of Barossa fruit that have been earmarked on the basis of opulence, exuberant tannins and refreshing acids, treated to the most adroit vinification techniques.

All fruit is picked when physiologically ripe to obtain peak performance in terms of sugar and flavour development. Grapes are destemed into open fermenters, pH is adjusted and vinification takes place over seven to ten days at 24°C. The ferments are treated to hand plunging three or four times daily, basket pressed in the traditonal manner and transferred to barrel or tank for the completion of malolactic. A mostly Shiraz wine with components of Merlot and Cabernet, all parts are racked and returned to barrel two or three times throughout the twelve months of ageing to ensure a clean wine that does not need any fining or filtration. Not a large production but a very good one, with an ingratiating level of alcohol.
  Deep red colour. Lifted aromas of plum and spice, violet, vanillan and cardamon coffee, cigarbox and creamy oak. An intense palate of dark fruit, red currant and the most gripping tannins. A full bodied wine to accompany a char grilled ribeye or ripe, pungent hard cheeses.
