Tempus Two is the culmination of Lisa McGuigan's dream to create a world class tourism experience within an ultra premium winemaking estate. Tempus Two have broken the tradition with their tantalizing editions of dessert wine, sealing the precious liquid within hand blown bottles of Italian glass, which themselves have won design awards. Botrytis Cinerea, Noble Rot, is a fungal infection which causes dehydration and concentration of juices within the infected grape. There was much debate at Tempus Two about which style to produce from the intensely sweet Griffith Semillon. The natural sugar levels were heightened and the grapes harvested late to fully capture the intense, complex favours. Alcohol 10.0

Colour is a deep golden yellow. Aromas of preserved apricots and candied citrus marmalade with hints of wild honey. Powerfully rich and opulent displaying the quintessence of botrytis semillon. The flavours of dried apricots, citrus fruit marmalade and underlined by a subtle touch of wild honey. Tempus Two displays restrained acidity ending with a refreshing citrus lift, balanced by the concentration of flavours that give overall elegance and finesse.
