The purity of wine is a Burgundian tradition. At Maison Louis Jadot the philosophy is to respect origin of fruit, as each wine is encouraged to develop its own personality. Parcels of Pinot Noir typically grown to limestone over calcareous marl soils, are macerated for long periods in open wooden vats to extract colour and tannin. The base wines are all fermented by a number of dedicated growers over a the course of a fortnight, to the unique style of each individual sub region. At every stage of the process, human intervention is kept to a minimum. After final assemblage, the finished Cuvee is treated to an extended term of age, partly in small 228 litres oak barrels and partly in vats.
