Old Richmond Gaol was one of Diemen Land's first prisons, built by the convicts themselves, of good old fashioned granite blocks, laboriously hauled in wooden hand carts and quarried from the ominously monikered Butchers Hill. Today, Butchers Hill is the site of the steepest sloping vineyard in Coal River Valley, invigorated by afternoon sea breezes and prevailing winds from the roaring forties, its highly auspicious, self mulching black Vertosols, yield extraordinary wines. Giovanni Tait mastered the family tradition of coopering wine barrels before migrating to Australia in 1957. Established 1968 by Word War II flyer Egerton E.S Dennis, on ninety acres of McLaren Flat along the prestigious winegrowing terroirs at Kangarillla Road, the Dennis family pioneered the production of Mead alongside colleague and enthusiast John Maxwell. In 1997, Michel Chapoutier set off to explore the terroirs of Australia and settled on the state of Victoria, renowned for its distinct soils and astonishing diversity of microclimates

With vineyards in the Pyrenees and Heathcote, the goal is to create world class wines that speak of the individual terroirs in which they are grown.Utilising Rhone varietals, Marsanne, Viognier, Grenache and Shiraz, Mathilde wines are selected for their individual characteristics. In the cool region of the Pyrenees, the Shay’s Flat Vineyard nestles in the ranges with a northeastern aspect on mixed red soils of schists, silt, quartz and clay. Producing high quality red especially Shiraz.

Planted to a steep, contoured slope on the Pyrenees Ranges, with high draining and low yielding quartz soil, the Landsborough Vineyard faces east and produces excellent whites, especially Chardonnay. On the famed Cambrian red soil of Heathcote is Touron's Lady’s Lane Vineayard. Dry grown Shiraz vines are naturally low yielding and produce a wine that is full flavoured, elegant and robust. All Tournon vineyards are farmed orgnanically and managed to yield the finest fruit in Australia.
