A Grenache dominated wine with slightly lesser components of Syrah and Mouvedre from vines planted to alluvial alpine deposits and rolled pebbles over a former sea bed of the miocene epoch. An assemblage of estate grown fruit with parcels from a seven hectare property to the west of Château Beaucastel and salubrious sites near the center of the village at Chateauneuf-du-Pape. Select parcels are vinfied according to the exacting Beaucastel technique of destemming and warming the fruit before treating the musts to a traditional southern Rhône fermentation.

Pertaringa lies at the foothills of the Mount Lofty Ranges, the perfect location for grape growing by virtue of a temperate environment and deep clay loam soils. Undercover is a metaphor of the McLaren Vale's tradition of supplying other regions with bespoke batches of fruit which are vinified into some of Australia's most favourite wines. Undercover is an old vine Shiraz, selected from Pertaringa's five decades old vineyard, hand crafted by winemaking supremos Geoff Hardy and Ben Riggs. Undercover espouses the essence of McLaren Vale Shiraz.

Petaluma Coonawarra 2006

Predominantly Cabernet Sauvignon and Merlot with smaller portions of Shiraz and Malbec. The old vines at Evans Vineyard are hand pruned and hand picked, and are treated as dear old individuals. This is the first use of Shiraz since 1982 and only the second vintage with Malbec, since the first Petaluma Coonawarra vintage in 1979. A wonderful ripe, full flavoured dry red wine to decant and breathe before service. The individual batches were assembled after a total of twenty two months in oak before a light egg white fining and no filtration.

Petaluma Merlot 2004

The 2004 Petaluma Coonawarra Merlot will be a long lived wine, as the best cool vintages have proven to be since the inaugural 1990. 2004 continues the recent tradition of being a blend of the best parcels of fruit from the Evans and Sharefarmers Vineyards. Both these mature vineyards produced small crops (6 tonne per hectare) in 2004, a result of a very cool, dry year. A generous, ripe Merlot with a delicate spicy lift, abundant tannins and significant texture, and is further complexed by a hint of Coonawarra mint.

Egerton E.S Dennis settled on ninety acres of vineyard at McLaren Flat after serving in the RAAF. Ege pioneered the production of Mead and sold his crop of wine grapes to some of Australia's most eminent brands before founding his own label in 1971, with the object of converting the high quality fruit into pure, estate made wines. Since establishment, Dennis Wines have collected over 200 medals at national and international wine shows, twice claiming the revered Bushing King awards for best wine at the McLaren Vale Winemakers Exhibition.
