Fruit is vinified at 24C to 28C by the action of natural yeasts. Once the must has achieved desired degree of sweetness, usually within forty eight hours, the wine is fortified by the addition of a 77% grape brandy, a balance of 80% must and 20% brandy.
Rich tawny colour. Excellent nose of nuts and hints of mature fruit. On the palate light and delicate, beautifully rounded, with hints of dried fruits and long elegant finish. Decanting is not required, Otima is ready to drink on release and will maintain its quality within the bottle.
