Constructed during early settlement by a supervisor of colonial convicts, at the very epicentre of the market gardens which serviced Hobart, Clarence House is a heritage listed manor which remains largely unaltered since the 1830s. It passed through several hands before being acquired by the Kilpatricks in 1993, who answered the call of Bacchus and established the grounds to vine. There are now sixteen hectares of viticulture, several significant Burgundy clones of Chardonnay and Pinot Noir, with smaller plantings of Sauvignon and Pinot Blanc, Merlot, Cabernet and Tempranillo. Jim Beam uses yeast from their private stock, carefully cultured to maintain purity and consistency. To keep quality consistent, each vat uses a mix of new yeast and yeast from a prior distillation. A second distillation refines the alcohol's proof and flavor, producing a new condensate called high wine or white dog. The high wine is then transferred directly to barrels without filtering or additives. Jim Beam is distilled at lower temperatures and reduced to no more than 125 proof or 62.5% alcohol. This retains more of the Whiskey's natural, mellow character.
