There are four tiny patches of vine at Scotchman's Hill, which have been mollycoddled by Robin Brockett, since the start of his tenure as chief winemaker in the 1980s. Made by those wonderful folks who invented Riesling, grapes are grown in a region that has been producing the world's most reasured white wines for millenia. Hugel is vinified exclusively from fruit grown to sites in and around Riquewihr, managed by vignerons under contracts which have lasted for generations. A fine match to all good seafood, poached, grilled or smoked.

Alsace as a winegrowing region was established by the Romans. Riesling grown here is healthy and highly aromatic, with remarkable natural acids that imbue vital crunchy expressions to the fine, classic wines. Grapes are taken in small tubs to the presses and filled by gravity, without any pumping or mechanical intervention. After pressing, the musts are cold settled and fermented in a combination of temperature controlled barrels and vats at 18C to 24C. Upon completion, batches are racked for natural clarification over the course of winter. The following spring, cmponents are lightly filtered and bottled for a spell of ageing under the Hugel estate cellars.
